These brioche rolls are a favorite of ours - soft, fluffy, and warm, with melty chocolate chips throughout. They're perfect for a bakery-worthy treat.


What is brioche? 


Brioche is a traditional French bread that is known for its buttery, flaky texture and slightly sweet flavor. It's a versatile bread that can be enjoyed on its own, used as a base for French toast, or even made into decadent desserts like bread pudding. One of the most popular variations of brioche is chocolate chip brioche rolls, which are soft and fluffy with pockets of melty chocolate chips throughout.


Making chocolate chip brioche rolls from scratch is a labor of love, but the end result is well worth the effort. The dough is made using a combination of warm milk, melted butter, sugar, yeast, all-purpose flour, and eggs. After the dough is mixed together, it needs to rise twice, first for an hour at room temperature and then for another 15 minutes after the rolls have been shaped.


The addition of chocolate chips takes these brioche rolls to the next level. Semi-sweet chocolate chips are kneaded into the dough after the first rise, creating pockets of melted chocolate throughout each roll. The rolls are then brushed with an egg wash and baked until golden brown. These chocolate chip brioche rolls are perfect for a special occasion brunch, or just as a sweet treat to enjoy with a cup of coffee or tea 


Ingredients:


To make this Chocolate Chip Brioche, you will need :


  • 1 1/2 cups warm milk (heated to 100 degrees)
  • 6 tablespoons melted butter (not hot)
  • 1/4 cup white sugar
  • 2 1/4 teaspoons active dry yeast
  • 5 cups all-purpose flour, plus 2 tablespoons if needed
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup semi-sweet chocolate chips
  • 1 egg, for egg wash


Chocolate Chip Brioche Rolls Instructions:


In the bowl of a stand mixer, whisk together warm milk, melted butter, and white sugar. Sprinkle in active dry yeast, whisk it in, and let it rise for 10 minutes until foamy.


Once the yeast has risen, add in all-purpose flour and salt. Turn the machine to low until the dough comes together, then add in eggs and mix on medium for about 8-10 minutes. If the dough is too sticky, add in 2 tablespoons of flour. The dough should be elastic and slightly sticky.


Place the dough into a large bowl, cover with plastic wrap, and let it rise for 1 hour at room temperature until doubled in size.


Once risen, stretch the dough out a bit and knead in chocolate chips.


Divide the dough into 10 even balls, each weighing 5.6 ounces, and shape each one into a smooth round ball. Place the rolls onto a lined baking sheet with parchment paper, making sure to space them out as they will expand quite a bit in the oven. Add extra chocolate chips for a pretty presentation.


Cover and let the rolls rise for 15 minutes. Brush with egg wash (whisk together 1 egg) and bake at 350 degrees for 18-20 minutes or until the tops are golden brown.
