Traditional Focaccia Bread 


This Focaccia Bread recipe makes a soft and tender Italian bread that is great as an appetizer or with your favorite meal. You won’t believe how easy it is to make.

Focaccia recipes use simple ingredients and are easy enough for the beginner or the avid bread baker.


What Is traditional Focaccia break ?


Focaccia Genovese is a type of Italian oven-baked flatbread baked in the oven. It has a similar texture to pizza dough has.


It can be eaten as an appetizer, snack, table bread, or focaccia for making sandwiches.


This is a classic authentic recipe typical to the Liguria region, where it’s called “focaccia all’olio” translated: focaccia with oil. Also, it’s called Focaccia Fugassa bread in the Genoese dialect.


Ingredients


To Make this traditional focaccia bread, you will need :


For the bread:

  • 400 g of wheat flour
  • 30 g brewer's yeast
  • 250 ml of water
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon of sugar
  • 1 teaspoon salt


Accompaniments:

  • 30 ml of extra virgin olive oil
  • 50 ml of water
  • Coarse salt
  • Rosemary


Preparation


 In a large bowl, dissolve the brewer's yeast in room temperature water and sugar.


Sift the flour over the mixture and knead until a sticky, wet mixture is obtained, transfer to a work table and continue to knead until a mixture of smooth, soft and uniform consistency is obtained.


Oil your hands and distribute the dough on a greased baking tray, cover with a clean kitchen towel and leaven for 60 minutes in a warm, dry place.


Turn on and pre-heat the oven to 250°C (482°F) for at least 10 minutes.


Oil your hands again and mark small holes with your fingertips on the dough, without drilling, evenly over the entire focaccia, season the surface with coarse salt and rosemary to taste.


Place in the preheated oven and cook for 10 minutes, remove from the oven and brush the surface of the dough with an emulsion of water and olive oil, place in the oven again and cook for another 10 minutes. Remove from the oven and cool on a wire rack.
