Cheese Cake And Puff Pastry

There is nothing that makes me happier in life than Cheese Cake And Puff Pastry. Seeing this  cheesecake creation brings another favorite dessert to life creating the ultimate fusion of flavors. This simple recipe is ready from start to finish in under an hour and is always a hit at the dinner table.

  • 3 eggs
  • 60ml of water
  • 1 teaspoon salt
  • 240g of flour
  • 130g grated cheese
  • 160g of cottage cheese
  • 1 large puff pastry, cut in half
  • 160ml melted butter
  • 1 tablespoon vegetable oil

Beat the eggs with salt and water. Add the flour and knead until the dough is completely non-sticky and a bit hard to knead.

Shape the dough into a log, cut it into 8 pieces, roll them up and let them rest for 1 hour.

Dust your work surface with flour and roll out the dough into a disk. Add more flour on top, add another disk, more flour, one more dough disk, and a final portion of flour.

Roll out the dough stack to 3 thinner layers. Separate the layer and roll each one individually until they are paper thin and transparent.

Repeat with the leftover dough.

Boil each dough sheet in salted water with a little vegetable oil for one minute, then immediately transfer to a bowl of ice water. Be sure to add cold water to keep it cold all the time.

Mix both types of cheese until a paste forms.

Roll out each half of the premade puff pastry thinly to cover your baking sheet.

Layer puff pastry to cover bottom and sides of pan. Add a layer of pastry, drizzle with butter and repeat this process with another 3 layers of pastry.

Spread the cheese filling on top, add another layer of batter, more butter, and continue until you fill the pan with layers of buttered batter.

Top with another thinly rolled puff pastry sheet, tucking in sides, trimming off excess if necessary.

Brush the surface with the remaining butter and bake at 190C/375F for 40 minutes. Let cool before slicing.
